The part that genuinely costs you time is boring and nobody leads with it: the bottom left corner of the keyboard is laid out differently, and your hands know the old one.
What key travel actually does
Key travel is how far a key moves before it registers. Apple's laptop and Magic keyboards sit around 1mm. A typical Windows laptop is 1.2 to 1.5mm. A desktop mechanical is 3.5 to 4mm.
That's a real physical difference and it does change the feel enormously. What it doesn't change much is speed.
Short travel means less distance per press, which theoretically allows faster repetition. Long travel gives clearer feedback about when a key has actuated, which theoretically improves accuracy. In practice these roughly cancel, and what dominates is familiarity. Whichever you've used for the last year is the one you're fast on.
I ran the same five test lengths across a Magic Keyboard, a ThinkPad, and a full size mechanical over a week, several runs each, same time of day. The spread between the three was smaller than the spread between my good and bad runs on any single one of them. That's the whole finding, and it matches what tends to come up whenever people run this properly.
Where travel does matter is fatigue and noise, not speed. Long travel on a heavy switch is more tiring over a full day. Very short travel gives some people a bottoming-out ache because there's no cushion. Neither shows up in a two minute test, which is exactly why two minute tests are the wrong tool for choosing a keyboard you'll use for years. The modifier problem is the real cost
Here's what actually slows you down.
On Windows, Control sits in the bottom left corner. On a Mac, that corner is Function or Control depending on the model, and Command sits next to the spacebar where Alt lives on a PC.
So every shortcut you've automated is now under a different finger. Copy, paste, undo, select all, save. These are movements you stopped thinking about years ago, and suddenly they're wrong. Worse, they're wrong in a way that produces an action rather than nothing. Hitting Control-W on a Mac where you meant Command-W doesn't do nothing, it might do something else entirely.
That's the tax. Not typing letters, but everything wrapped around typing letters. I've caught myself closing the wrong window mid sentence more times than I want to admit.
The corrections are where it compounds. Deleting a word, jumping to the start of a line, selecting a sentence, all use different modifier combinations. On Windows it's Control plus arrow. On Mac it's Option plus arrow, with Command plus arrow doing the line jump. When you're typing fast and make an error, you correct by reflex, and the reflex is now wrong. You end up looking at the screen to see what happened, which breaks flow far more than a slow keystroke ever would.

Switching daily between both
A lot of people do this: Mac at work, PC at home, or the reverse. It's the worst case and it's worth being deliberate about.
Two approaches work, and they pull in opposite directions.
The first is to make both machines match. Remap the modifiers on one so the muscle memory transfers. On Windows you can swap Control and Alt to sit where Command does; on a Mac you can remap Command to the corner position. It takes an hour to set up and it removes the problem permanently. The downside is that you're now fast on your own machines and lost on anyone else's, which matters if you pair program or use shared computers.
The second is to accept the split and let your hands learn context. This genuinely works and it takes a few weeks. The trigger is the physical feel of the machine, so your hands switch mode when they land. People who do this report it becoming automatic in the way that driving a different car does.
What doesn't work is doing neither and being mildly annoyed forever, which is what most people default to.
My own answer was to remap the work machine and stop fighting it. Twenty minutes of setup bought back a small tax I was paying dozens of times a day. If you're going to be in both environments for years, do the arithmetic on that once.
One practical note: if you use an external keyboard, both operating systems let you configure modifier behaviour per device. That means one physical keyboard can behave correctly on both machines without you touching the laptop's own layout, which is the cleanest solution when it's available.

The good news is that the thing you spent years building does transfer. Letter positions are identical. Home row is identical. All the actual typing skill carries over completely, which is why plain prose speed barely moves.
What has to be relearned is a fairly short list: modifier positions, correction shortcuts, and a handful of punctuation keys that sit differently depending on layout.
That's maybe a week of mild irritation, not a retraining project. It's nothing like changing layout entirely, where you're rebuilding the letter map from scratch and losing months.
If you want to know your own number rather than trusting mine, test it honestly. Same test length, same text type, several runs on each machine, spread across different times of day so you're not comparing a fresh morning against a tired evening. One run each proves nothing, because the variance between your own runs is larger than the effect you're trying to measure.
Test with punctuation heavy text too, not just plain words. That's where layout differences actually show, and a clean prose test will hide the exact problem you're trying to measure. Running a few races is a decent stress test for this, since the pressure surfaces the reflexes you fall back on.
